Well, filmed you either have to go back before WWII or thereabouts or after China opened up for non-communist-propaganda filmmaking, so either way, I don't think you're gonna find what you're looking for. Of course in the last 10-20 years there have been shot some films there of the action variety but none that I care about so I must defer to someone else for that info.

Set, only a few comes to mind like Vengeance!, Shanghai, Shanghai, Boxer from Shantung (maybe), and a bunch of early 70's bashers that I'm blanking on at the moment.

I can only think of series, here : The Bund with Chow Yun Fat, Once upon a time in Shanghai with Adam Cheng, Hero from Shanghai with Gallen Lo and Storm in Shanghai, with Adam Cheng.

Yet, It seems to me that Chow Yun Fat played in a movie related to Shanghai, but the title escapes to me...

99% of HK films set in Shanghai, is of course not shot there, so if it's actual Shanghai sights OP is after, that is not the place to look. And yeah, most of the Shanghai settings are not that elaborate or reflective of the real city. It's Taiwan, HK or the Beijing film studios dressed up.... just so we're clear.

It is set there, but a remake of Boxer from Shantung. 

Shanghai Grand is another one.

It's been a long while since I watched Shanghai Express but can't remember if the city was featured in it at all as it was set on the train for the most part except for the finale.

In my dvd of Fearless Golden Dragon, there were some previews of other movies and the English trailer of Billy Chong's The Kung Fu Executioner says that the story takes place in Shanghai.
