The restaurant fight in Anna (2019) was quite good.

Agreed. It seems the movie got largely overlooked, perhaps on account of being completely unoriginal, but some of the action was sweet.

Statham vs. Bernhardt hotel room fight in Parker (2013).

The part in "Train to Busan" where Sang-Hwa(Played by Ma Dong-Seok) beats the crap out of a bunch of zombies on the train with his fist. Leading to one of my favorite scenes where he picks up a zombie and slams it against the roof. That never fails to be awesome.

The toilet plungers bit reminded me of the nunchaku parody in God of Gamblers II. I wonder if the "How do ya like that?" line was a throwback to Dan Inosanto's quip in GOD.

They should have replaced Antonio Banderas with Dacascos for Ballistic: Ecks vs. Sever.

Tanner Buchanan obviously had kept up his training from Cobra Kai to have this brief fight scene against a douchy viral star in He's All That

This might be cheating but I recently watched Hydra. While some may argue that it's a "fight film," it's technically a drama with only two brief fight scenes that don't appear until 50 minutes in.
Anyway, the last fight scene in the film is one of my favorites in recent memory. Think The Raid but even scrappier and grabbier. I absolutely loved it. The rest of the film might not be to everyone's tastes but I thoroughly enjoyed that too.

Go to 0:56 on this clip, but we get to see Brandon Soo Hoo unleash his skills on Jack Black in Tropic Thunder
